Chicken, Carrot and Cheese Sandwiches
Grated carrot is the vegetable that disappears into a sandwich unnoticed.
Ingredients
- Cooked chicken breast300 g
- Carrots150 g
- Grated cheese80 g
- Greek yoghurt60 g
- Sandwich bread400 g
- Butter30 g
Method
- Shred or finely chop the cooked chicken and coarsely grate the carrot.
- Mix the chicken, carrot and cheese through the yoghurt and season well.
- Butter the bread to the edges, then spread the filling evenly over half the slices.
- Close the sandwiches, cut them in half, and pack them cold.
- Make the filling the night before if the morning is tight — it keeps overnight in the fridge.

- 370 g Tinned tuna in springwater instead of Cooked chicken breast
Drain the tuna well and flake it before mixing so the filling does not make the bread soggy.
Vegetarian
Chickpea, Carrot and Cheese Sandwiches
- 400 g Tinned chickpeas instead of Cooked chicken breast
Roughly mash the drained chickpeas with a fork before mixing in the carrot, cheese and yoghurt.
Vegan
Chickpea, Carrot and Dairy-Free Cheese Sandwiches
- 400 g Tinned chickpeas instead of Cooked chicken breast
- 80 g Dairy-free cheese instead of Grated cheese
- 60 g Vegan mayonnaise instead of Greek yoghurt
- 30 g Dairy-free spread instead of Butter
Roughly mash the drained chickpeas before mixing them with the carrot, dairy-free cheese and vegan mayonnaise, and spread the bread with the dairy-free spread.
