Ready in just 20 minutes, this golden chicken and garlicky beans dish is the ultimate easy family dinner – a quick and delicious weeknight favourite!

- green beans160 g
- tenderstem broccoli160 g
- panko breadcrumbs30 g
- skinless chicken breast300 g
- fresh thyme4 sprig
- lemon1 ea
- fennel seeds — 1 tsp2.8 g
- garlic — 2 cloves10 g
- butter beans — jarred, with their liquid570 g
- natural yoghurt30 g
Method
- Put a non-stick frying pan on a medium heat. Trim and add the green beans and broccoli, halving any thicker broccoli stalks lengthways, then cover and let them steam and char for 6 minutes as the pan heats up, tossing regularly.
- Lay out a large sheet of greaseproof paper and scatter half the breadcrumbs over one half. Season the chicken breasts with sea salt and black pepper and sit them on top, then scatter over the rest of the crumbs. Fold over the paper, then use a rolling pin to repeatedly and firmly tap the chicken left to right, top to bottom, until 1cm thick, pressing the breadcrumbs into the chicken.

Golden fish & garlicky beans
- 300 g Firm white fish fillets instead of skinless chicken breast
Do not bash the fish: press the crumbs onto both sides and fry for 3 minutes a side, turning carefully, until golden and just flaking.
Gluten-free
- 30 g Gluten-free breadcrumbs instead of panko breadcrumbs
No change to the cooking; gluten-free crumbs can colour a little faster, so watch the heat.
Dairy-free
- 30 g Unsweetened soy yoghurt instead of natural yoghurt
No change to the cooking; dollop the soy yoghurt over as before.
