Method

Dice the onion and mince the garlic. Add both to a large pot with the olive oil and cook over medium heat until soft and translucent.
Add the ground beef and continue to sauté until fully browned.
Drain and rinse the beans and add them to the pot along with the diced tomatoes, tomato paste, 250 ml (1 cup) water, and all of the chili seasoning ingredients. Stir until well combined.
Cover and simmer over low heat for at least 30 minutes, stirring occasionally (the flavour gets better the longer it simmers).
Taste, adjust the salt or seasonings if needed, and serve hot with your favourite toppings.
