A whole side of salmon baked in honey, garlic and lemon butter until flaky with crispy edges.

Ingredients

side of salmon800 g
butter — melted115 g
honey170 g
garlic cloves — crushed6 ea
lemon — half juiced and half sliced1 ea
fresh parsley — chopped5 g

Method

Preheat the oven to 190°C (170°C fan) / Gas 5.
Mix the melted butter with the honey, garlic, lemon juice and a pinch of salt and pepper.
Put the salmon on a large baking tray, pour over the honey garlic mixture and lay the lemon slices on top.
Bake for 20-25 minutes, basting halfway through.
Scatter over the fresh parsley and serve.
