Honey Soy Chicken Drumsticks with Rice
Drumsticks are the cheapest chicken going and this is the easiest thing to do with them.
Ingredients
- Chicken drumsticks1.2 kg
- Honey60 g
- Soy sauce60 ml
- Garlic15 g
- Fresh ginger15 g
- Long grain rice300 g
- Broccoli300 g
Method
- Whisk the honey, soy sauce, crushed garlic and grated ginger together in a large bowl.
- Add the drumsticks, turn to coat, and leave for 20 minutes if you have the time.
- Heat the oven to 200C. Spread the drumsticks on a lined tray and pour over the marinade.
- Bake for 40-45 minutes, turning and basting twice, until sticky and cooked through.
- Cook the rice and steam the broccoli for the last 5 minutes. Serve with the pan juices spooned over.

Honey Soy Salmon with Rice
- 600 g Salmon fillets instead of Chicken drumsticks
Marinate the salmon for no more than 15 minutes, then bake at 200C for 12 to 15 minutes instead of 40 to 45.
Gluten-free
- 60 ml Tamari instead of Soy sauce
