Method

Spread each rice cake thinly with cream cheese right to the edge.
Top with cucumber coins and halved cherry tomatoes, pressing them lightly into the cheese.
Pack the cakes and the toppings separately if the box sits until second break — assembled they go soft in a couple of hours.
Send a small pot of the cream cheese so they can be built at the table.
