Sausage, Potato and Onion Bake
Sausages on special turn into a whole dinner with one tray.
Ingredients
- Thick pork sausages8 ea
- Potatoes900 g
- Brown onions300 g
- Carrots250 g
- Olive oil30 ml
- Dried rosemary1 g
Method
- Heat the oven to 200C. Cut the potatoes into 3cm chunks and the onions into thick wedges.
- Toss the potatoes, onions and carrots with the oil and rosemary and spread over a large tray.
- Roast for 20 minutes, then turn the vegetables and lay the sausages on top.
- Roast for a further 25-30 minutes, turning the sausages once, until browned and cooked through.
- Season and serve, spooning the pan juices over.
